I’ve been reading a lot about Cichlids, and it looks like sand is the preferred substrate… I understand some species will do better with sand, but will the vast majority do ok with a small pebble substrate? I’m not looking for ascetics… just how the fish will do with the gravel. Thanks

They will do well with gravel. Alot of people use sand as a buffer to help increase ph.

Sandy bottom is their natural environment, so they may have an imprinted liking for that, but other than the sandsifters, they can do with any substrate.
