I'm starting a shellie tank and I'm wondering if I can speed up the initial cycle of the tank by adding media from my other tanks, but theres a catch. My other tanks are all regular community tanks with much lower pH. I'm curious if I will still be able to transfer any benefical bacteria or do I just need to start fresh with this tank

I don't see any reason why you couldn't use some of the media from the other tanks. Even if you are going to buffer the ph up, it shouldn't have any I'll effects on the bacteria. IIRC, a ph that is too low can stall a cycle anyway.

Nope. The only issue would be if the pH was below 6. Nitrifying bacteria are inhibited at a very low pH, so there wouldn't be many to transfer. But, any that did transfer would survive just fine and begin multiplying again.
