I finally added Bolivian Rams to my tank. I asked for 2 females 1 male, I read up on how to tell them apart but Im not certain what I have. *** got multiple photos of all 3 bellow, labeled with their names.

Im pretty sure Jerry is a male, I suspect Butter is female. Peanut looks more male than female. Your help would be appreciated.

Also, if I do have 2 males and 1 female, do I have to return one of the males? (its a 45 gallon homemade tank 36" x 18" x 17")

I see two males and a female. If you look at the tail, you can see the filaments on top and bottom; these are males.

As far as I know, Bolivians do well in pairs or in large groups. With just three fish, I would take out one of the males.
