have had a tank set up now for a couple weeks with some guppies and ghost shrimp and had tested through the ammo spike and nitrites followed but have been testing for the last 4 days with between .25 ish and 0 ammo but still 5 ppm or better nitrites ph is 8 ish and a 6 -7 kh nitrates around 10 to 20 ppm just wondering if this was normal to have a high nitrite but almost no ammo

Yes. This just means that the bacteria that convert ammonia to nitrite have built a good colony, but they're still working on the nitrite to nitrate bacteria to get their stuff together.

It takes much longer for the nitrite to be converted to nitrate than it does to convert the amonia to nitrite. It took one of my tanks over two weeks for the nitrite to drop.
