I found this tank on this site a while ago, and can't find it again to see what type of plant this is...maybe a val? I'm new to plants, but would like to achieve the same effect in one of my tanks.

They are definitely a Vallisneria, and look like Giant Val to me.

It definitely looks like Giant (Jungle) Val to me, too. I've had that plant before and the leaves can easily get to be 5 feet or longer.
