I was considering getting rid of my air stones when installing my UGJ, Egg Crate and switch to sand. Any idea how to tell if the tank will have enough oxygen to support the fish?

If the water is oxygen depraived the fish will mouth at the surface as if "gasping for air"...
Heavy breathing may be a sign the water is low in oxygen, although many things can cause heavy breeding...
Provided the surface has some rippling/splashing from the filter(s) you should be fine without the airstone...
