I have a female demasoni that has spawned twice that I have witnessed myself, one time being today. Both times, including today she has eaten the eggs. Is this normal or is there something wrong with her.

How much stress or pressure is she under? What does the stocking in the tank look like. Usually when they eat them that quick it's a stress thing.

How old is she? How big is she? Usually younger fish take a couple times before the start holding longer.
